This is a very easy banana bread and very delicious. The maple is the symbol of Canada and maple sugar is a natural sweetener very good for health. So you can have a piece of banana bread without guilt.
2 cups whole white flour (whole pastry flour)
2 ½ tsp baking powder
2 tsp baking soda
½ tsp salt
½ cup maple sirop
½ cup brown sugar
1/3 cup of light olive oil (You can use canola oil but do not use extra virgin olive oil)
2 large eggs
1 tbsp vanilla extract
½ cup plain yogurt
3 medium bananas mashed
1 cup of pecan minced
1. Preheat the oven to 350 F. Grease a loaf pan. In a small bowl, mix the flour, baking soda, baking soda, and salt.
2. In a medium bowl beat together the sugar, oil, yogurt, eggs, maple sirop, and vanilla until combined. Add the dry ingredients in three additions and stirring well after each addition. Gently stir in the bananas and nuts.
3. Pour the batter into the loaf pan. Bake for 45 to 55 minutes, until a toothpick comes out clean.
