This do is excellent for tarts and guiche. It contains less butter than the traditional pastery dough and the result is very flavorful and crispy
For 3 dough you will need:

1 cup (228 g) softened butter

1 package of Philadelphia cheese softened

2 cups flour

 

In a bowl, beat the butter and the cheese during 1 min with a mixer. Add 1 cup of flour et beat until the mixture homogenizes. Add the remaining of the flour 1 cup at a time and beating between each addition. You may need to add 1 or 2 tbsp of iced water at end.

Gather the dough into 3 balls and refrigerate for 30 minutes. Roll the dough and fit it in a  9 inch pie pan.

 

You can also make this dough in a food processor. You repeat the same steps and processing between each step.
