Tunisian pasta

This is the favorite dish of my father, my brothers and my husband. It is spicy, easy and very very delicious.

 


You will need:

 

1 pound or more of beef

1 onion

6 garlic cloves diced

2 tbsp olive oil

1 small can of tomato paste (6 oz)

½ tsp turmeric

2 tsp ground caraway

1 tsp of red pepper paste (you can find at Arab Stores)

2 tsp ground red pepper (you can substitute with paprika)

2 bay leaves

4 ½ cups water

1 package whole-wheat pasta

In a big saucepan, sauté the onion and meat with the olive oil for 5 minutes. Add 3 diced garlic cloves. Cook for 3 minutes.

In a medium bowl mix the tomato paste, 3garlic cloves diced, bay leaves, red pepper paste, turmeric, ground red pepper, ground caraway, salt, pepper and water. Stir the wood spoon until the tomato paste and water turns to tomato sauce.

Pour this sauce over the meat and cook for 1 h 15 minutes or until the meat is tender, stirring from time to time to prevent sticking. Meanwhile, cook the pasta according to the package directions. Pour the sauce over the cooked pasta. ENJOY!!!
