Hot potatoes and asparagus salad

I found this recipe in Isa’s blog. The mixture of spices is very interesting and I decided to try it. It serves 4 persons as a side dish or 2 persons as a main vegetarian course. I modified the recipe a little bit.


 

You will need:

1 lb potatoes

1 lb asparagus

1 onion diced

2 tbsp of olive oil

1 tsp Dijon mustard or whole grain mustard

1 tsp cumin

½ tsp ground coriander

1/2 tsp red pepper flakes
¼ tsp turmeric (curcuma in French)

Juice of 1 lemon

3 handful of diced cilantro

 

Remove the hard extremities of the asparagus about (3 to 4 cm). Cut the asparagus into pieces of 5 cm length. Cook them 5 minutes into the microwave. Put them into iced water to stop the cooking.

Peel the potatoes and cut them into cubes. Put them in a saucepan full the cold salted water. Add the curcuma. Bring to a boil and cook for 10 minutes or until the potatoes are done.

Sauté the onion in the olive oil for a few minutes. Add the spices (red pepper flakes, cumin, coriander, salt and pepper). Add the cooked potatoes and asparagus. Add the mustard and toss everything together. Add the cilantro and the lemon juice. Enjoy!!!!
