Hazelnut pudding

This is dangerously delicious desert that we make in Tunisia to celebrate the birth of our prophet (Mouled). We share it with our friends and neighbors. When you have it in the fridge you can’t stop eating it. That’s why I describe it as dangerous . Again like almost all of my recipes, it is really easy.

You will need:

500 g whole raw hazelnuts (I was able to find them at Wegman)

150 g all purpose flour

4 cups milk

½ can of unsweetened evaporated milk

150 g sugar (3/4 cup)

2 tsp rose water

Preheat the oven to 350 F. Toast the hazelnuts until they become golden. Let them cool a little and ground them in the food processor. In a big saucepan, put the grounded hazelnuts, 4 cups of milk, all purpose flour and stir until everything is well mixed. All these steps must be done outside the stove. Now, put the saucepan over the stove and don’t stop stirring with a wooden spoon. Half way of cooking  time add ½ can of evaporated milk. Continue cooking while stirring until it thickens. Finally add the rose water.
Pour the pudding into small custard or ramekins and let it completely cool in the fridge.
