Brioche bread with almond butter

I never thought that one day I’d be able to make perfect brioche bread like the one you buy from French bakeries. I found this healthy incredible bread in Sophie Blog. Instead of making this bread with 1 stick of butter she uses almond butter. The result is really outstanding.


 

You will need

250g  (2 cups) of flour (I used  cup all purpose flour and 1 cup whole white wheat flour)

3 eggs

30 g sugar (approx 3tbsp)

1 tsp vanilla extract

80 g almond butter + 20 g softened butter (6 tbsp almond butter + 1.5 tbsp softened regular butter)

2 tsp milk

2 tsp dried yeast

 

If you have a bread machine use it. I don’t have one I used my food processor.  If you don’t have one, mix the ingredients in a bowl with your hands.

Put the flour, salt, sugar and yeast in the food processor. You have to make sure that when you do so, the yeast and the salt don’t touch each other. In a bowl, beat the eggs, milk and vanilla. Pour this mixture into the food processor. Process until the mixture is homogenous. Add the almond butter and butter. Process again. Transfer the batter to the baking pan greased and floured. Let is raise for 1h30 min. Sprinkle some sugar on the top of the bread and bake at 375 F for 20 min.
