Moroccan Harira

This is a delicious Moroccan soup especially prepared during Ramadan. It is delicious and very comforting.

You will need:


½ cup lentils

1 cup chickpeas (put dry chickpeas in water overnight)

1 lb beef meat cut into cubes

1 big onion diced

3 ripe tomatoes diced

3 celery stalks diced

1 tsp ground ginger

½ tsp curcuma

1 tbsp olive oil

salt and pepper

8 cups water + ½ cup

4 tbsp flour

2 tbsp tomato paste

½ cup rice or pasta cut into small pieces

½ cup diced cilantro

In a saucepan, put lentils, chickpeas, meat, tomatoes, celery, ground ginger, curcuma,

olive oil, tomato paste. Add the 8 cups of water, salt and pepper and cook for one hour.

Then Whisk the flour into ½ cup of water and add to the saucepan stirring well. Continue stirring for 10 minutes. Then add the pasta and cilantro and cook again for 10 min. Enjoy!!!
