Tajine aux boulettes de thon

The typical Moroccan dish is done with sardine. Since fresh sardines aren’t available in Baltimore, I’ve done it with tuna and the result is absolutely DELICIOUS.

You will need:

1 lb frozen tuna (you can use fresh if you want)

½ cup of dried breadcrumbs

1 egg

2 potatoes cut into slices

2 tomatoes cut into slices

1 bay leaf

water

½ cup olive oil

juice of 1 lemon

¼ cup parsley

¼ cup cilantro

½ tsp salt and pepper

1 tsp of paprika

1 tsp of cumin

¼ tsp turmeric

¼ cup olive oil

1 tsp of garlic puree

Process the tuna in the food processor.

In a small bowl, mix the parsley, cilantro, olive oil, salt, pepper, paprika, cumin, turmeric, garlic, and lemon juice.

In a medium bowl, put the tuna, half the content small bowl, the breadcrumbs and the egg. Form small balls with your hands, set aside.

In saucepan, put the content of the small bowl, the tuna bowls, tomatoes, potatoes , the bay leaf and the olives.  Add some water and cook for approximately 15 minutes. You can use any kind of fish for this dish.
