This is a delicious recipe I found in one of my French cooking book. It is elaborated but absolutely worth it.
You will need:
500 g of lamb shoulder cut into pieces
1 big eggplant diced into wedges or 2 small eggplants
2 tomatoes cut into wedges
1 cup of plain yogurt
4 scallions finely diced
¼ chopped cilantro
Juice of 1 lemon
2 tbsp of lam curry
3 tbsp of olive oil
1 tsp mustard seeds
Some Ginger and a little nutmeg (I added these spices)
Salt and pepper
Whisk ½ cup yogurt, juice of 1 lemon and 1 tbsp of curry. Pour this mixture over the lamb and let it marinate for 2 or 3 hours.
Spray non stick spray on a baking dish. Preheat the oven to 400 F. Put the eggplants. Sprinkle some ginger and a little of nutmeg over them. Add drizzle some olive oil. Mix well and Bake for 15 to 20 minutes.
Heat 2 tbsp of olive oil and grill the marinated lamb for 10 minutes or until cooked medium.
Heat 1 tbsp of olive oil in another skillet, sauté the scallions, mustard seeds and curry. After one minute pour in the tomatoes and the cooked eggplants. Salt and pepper and cook for 15 minutes. Then add ½ cup of yogurt and cook for 5 minutes. Sprinkle the cilantro on top. Serve the lam with the eggplant sauce. Enjoy this 5 stars dish.
