Cucumber-Avocado Gazpacho

For 4 people:

 

400 ml water

3 ripe avocados

1 small cucumber

1 zucchini

½ bunch parsley

½ bunch coriander

Juice and zest of 1 lime

1 glove of garlic

1 tsp cumin

Salt and pepper

Chop the vegetables and put everything into the blender. Add salt and pepper to taste. Chill the soup and serve.
