Garlicky pumpkin puree

1 small pumpkin (2 lbs)

3 garlic gloves crushed

1.5 tbp butter

Salt and pepper

I’m trying to find healthier alternative to mashed potatoes. Try this recipe; it is delicious

Cut the pumpkin in 2 halves. Remove the seeds and microwave for 10 minutes.

In a saucepan, sauté the garlic in the butter. Spoon the cooked pumpkin into the saucepan.

Season to taste. Enjoy!
