This is a delicious cake recipe I found in my favorite Canadian magazine “Coup de pouce”.
2 cup chocolate graham cookies
¼ cup melted butter
3 packages of light cream cheese (8 oz each) at room temperature
¾ cup sugar
1 ¼ cup heavy cream (whipping cream)
10 oz dark (70%) Chocolate
6 0z dark chocolate
1/3 cup heavy cream
Spray a cheesecake pan with non cooking spray. In a food processor, ground the cookies with butter.
Press this mixture into the pan. Bake for 375 F for 10 to 12 minutes. Let it cool at room temperature.
In a big bowl, with a mixer beat the cheese with the sugar until the mixture become creamy. Add the eggs 1 by one and beat after each addition.
In a small bowl pour the heavy cream and the chocolate cut into pieces. Microwave for 1 min 30, stopping after each 30 sec to stir the chocolate. When the chocolate is completely incorporated the cream and it the cheese mixture and beating again until everything is well incorporated.
Pour this mixture in the baking pan over the cookies crust. Bake at 325 F for 1 h. Turn off the oven and let the cake rest for an hour then transfer to the fridge. Transfer to the fridge and let it cool for 4 hours.
Meanwhile, mix the chocolate and the milk. Microwave for 1min30, stirring the chocolate after each 30 sec. Spread the ganache over the cake. Enjoy!!!!!
