Brik pie

Tajine malsouka (in Tunisian)

 

This is a very famous pie made with the Tunisian Briks that you can find in Arab food stores. If you don’t find them you can substitute them with phyllo dough sheets or egg roll wrappers. It is a little elaborate to make but very delicious.

 

You will need:

 

9-inch pie plate

½ stick of butter melted

1 tbsp olive oil

1 chicken breast diced

1 potato

1 onion

4 eggs

2 hard-boiled egg cut into small pieces

100 g shredded cheese

1 tsp turmeric

Salt and pepper

10 brik sheets

 

Preheat the oven to 375 F.

Peel the potato and cut it into 1/4-inch thick fries. Fry the potatoes and set them aside.

In a saucepan, sauté the onion and the chicken with olive oil and the chicken. When the chicken is done add the turmeric and water if necessary to prevent sticking. Set aside.

Pour the chicken mixture in a bowl. Now add the eggs, cheese to the cooked chicken and the hard boiled eggs. Season to taste.

Butter the pie plate. Put over the first brik sheet and brush this sheet with butter. Repeat this operation 3 times. Then pour over half the pie mixture like in the photo below.

 

Put 2 sheets of sheets, making sure to brush between the sheets with butter. Add the remaining half of the pie mixture. Put 4 sheets of birk and brushing each sheet with butter. Seal the edges together. Cover with a foil paper and bake for 25 minutes. Remove the paper foil and bake for 10 minutes.
